How to create Egg Curry


Ingredients:

  • 4-6 eggs (hard-boiled, peeled)
  • 2 tbsp oil (vegetable or mustard oil)
  • 1 large onion (finely chopped)
  • 2 tomatoes (pureed or finely chopped)
  • 1 tsp ginger-garlic paste
  • 1 green chili (optional, slit)
  • ½ tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • ½ tsp garam masala
  • 1 tsp cumin seeds
  • 1 bay leaf
  • ½ cup water (adjust as needed)
  • ¼ cup coconut milk or fresh cream (optional, for richness)
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions:

  1. Boil and Fry Eggs:

    • Boil the eggs for about 10-12 minutes, peel them, and make small slits.
    • Heat 1 tbsp oil in a pan, add a pinch of turmeric and salt, and lightly fry the eggs until golden brown. Set aside.
  2. Prepare the Gravy:

    • In the same pan, add 1 tbsp oil. Once hot, add cumin seeds and bay leaf.
    • Add chopped onions and sauté until golden brown.
    • Add ginger-garlic paste and green chili, and cook until the raw smell disappears.
    • Add tomato puree and cook until the oil starts to separate.
  3. Spice it Up:

    • Add turmeric, red chili powder, coriander powder, and salt.
    • Stir well and cook for 2-3 minutes.
    • Pour in water (and coconut milk if using) and let the gravy simmer.
  4. Add Eggs & Finish:

    • Add the fried eggs to the curry and let them soak in the flavors for 5 minutes.
    • Sprinkle garam masala and mix well.
  5. Garnish & Serve:

    • Garnish with fresh coriander leaves.
    • Serve hot with rice, roti, or paratha.
