Ingredients:
- 4-6 eggs (hard-boiled, peeled)
- 2 tbsp oil (vegetable or mustard oil)
- 1 large onion (finely chopped)
- 2 tomatoes (pureed or finely chopped)
- 1 tsp ginger-garlic paste
- 1 green chili (optional, slit)
- ½ tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp coriander powder
- ½ tsp garam masala
- 1 tsp cumin seeds
- 1 bay leaf
- ½ cup water (adjust as needed)
- ¼ cup coconut milk or fresh cream (optional, for richness)
- Salt to taste
- Fresh coriander leaves for garnish
Instructions:

Boil and Fry Eggs:
- Boil the eggs for about 10-12 minutes, peel them, and make small slits.
- Heat 1 tbsp oil in a pan, add a pinch of turmeric and salt, and lightly fry the eggs until golden brown. Set aside.

Prepare the Gravy:
- In the same pan, add 1 tbsp oil. Once hot, add cumin seeds and bay leaf.
- Add chopped onions and sauté until golden brown.
- Add ginger-garlic paste and green chili, and cook until the raw smell disappears.
- Add tomato puree and cook until the oil starts to separate.

Spice it Up:
- Add turmeric, red chili powder, coriander powder, and salt.
- Stir well and cook for 2-3 minutes.
- Pour in water (and coconut milk if using) and let the gravy simmer.

Add Eggs & Finish:
- Add the fried eggs to the curry and let them soak in the flavors for 5 minutes.
- Sprinkle garam masala and mix well.

Garnish & Serve:
- Garnish with fresh coriander leaves.
- Serve hot with rice, roti, or paratha.
