Potato, Onion, and Cheese Frittata

Ingredients:

  • 6 large eggs

  • 1 medium potato, thinly sliced

  • 1 medium onion, thinly sliced

  • 1/2 cup shredded cheese (Gruyère, cheddar, or both)

  • 2 tbsp olive oil or butter

  • Salt and pepper to taste

Instructions:

  1. Cook the potatoes and onions: Heat oil in a skillet over medium heat. Sauté sliced potatoes for 5-7 minutes, then add onions and cook until soft and caramelized. Season with salt and pepper.

  2. Prepare the egg mixture: Beat eggs, season with salt and pepper, and stir in half the cheese.

  3. Cook the frittata: Pour the egg mixture over the potatoes and onions. Cook on medium-low for 5-7 minutes until edges set. Sprinkle with remaining cheese.

  4. Broil: Transfer the skillet to a broiler for 2-3 minutes until the top is golden and set.

  5. Serve: Let cool for a minute, slice, and enjoy!
