Ingredients:

6 large eggs 
- 
1 medium potato, thinly sliced 
- 
1 medium onion, thinly sliced 
- 
1/2 cup shredded cheese (Gruyère, cheddar, or both) 
- 
2 tbsp olive oil or butter 
- 
Salt and pepper to taste 
Instructions:
- 
Cook the potatoes and onions: Heat oil in a skillet over medium heat. Sauté sliced potatoes for 5-7 minutes, then add onions and cook until soft and caramelized. Season with salt and pepper.

Prepare the egg mixture: Beat eggs, season with salt and pepper, and stir in half the cheese. 
- 
Cook the frittata: Pour the egg mixture over the potatoes and onions. Cook on medium-low for 5-7 minutes until edges set. Sprinkle with remaining cheese. 
- 
Broil: Transfer the skillet to a broiler for 2-3 minutes until the top is golden and set. 
-
