½ cup flour

1 egg (for wash)

1 cup panko breadcrumbs

1 tbsp grated Parmesan (optional)

Instructions:

Cook eggs: Boil eggs for 5 minutes 30 seconds, then cool in ice water and peel.

Prepare asparagus: Cook in olive oil for 3-4 minutes, season with salt and pepper.

Coat eggs: Dredge eggs in flour, dip in egg wash, coat in breadcrumbs (with Parmesan).

Fry eggs: Heat oil in a pan, fry eggs for 2-3 minutes until crispy and golden.

Serve: Plate asparagus, top with crispy eggs, and garnish with fresh herbs.
