Crispy Mollet Egg with Asparagus

Ingredients:

  • 4 eggs

  • 1 bunch asparagus

  • Olive oil, salt, pepper

  • ½ cup flour

  • 1 egg (for wash)

  • 1 cup panko breadcrumbs

  • 1 tbsp grated Parmesan (optional)

  • Fresh herbs (optional)

Instructions:

  1. Cook eggs: Boil eggs for 5 minutes 30 seconds, then cool in ice water and peel.

  2. Prepare asparagus: Cook in olive oil for 3-4 minutes, season with salt and pepper.

  3. Coat eggs: Dredge eggs in flour, dip in egg wash, coat in breadcrumbs (with Parmesan).

  4. Fry eggs: Heat oil in a pan, fry eggs for 2-3 minutes until crispy and golden.

  5. Serve: Plate asparagus, top with crispy eggs, and garnish with fresh herbs.
